Bikini Recipe

Yields 10 servings

For the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Drink (makes 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Put every ingredients into a saucepan, bring to a light boil, mixing to dissolve. After that, remove from the heat and leave to cool entirely. Decant into an sterilised bottle, cap it and store in the fridge, where it will keep for about one month.

Preparing the Cocktail Base: Mix all the spirits and syrup in a sizeable container, leave to sit for 60 minutes, then pass it through preferably using muslin, so it's perfectly clear.

To serve: Add 85ml of your cocktail base into your stirring glass filled with ice, gently stirring lightly for a minute until cold. Strain into a cold coupe glass or a similar vessel, top with some cranberries and complete it with a quick spritz with the mandarin essence over the top.
